Harvesting and preserving food is only half the craft; maintaining your storage integrity across winter dampness decides whether your provisions survive until spring.

The 4 Golden Rules of Pantry Defense:

Master the Environment: Keep dry storage cool (50 to 60°F), dark, and ventilated to stop condensation.

Elevate Off Raw Floors: Never store stoneware crocks or glass jars directly on unfinished concrete, which wicks cold and moisture upward.

Remove Metal Canning Bands: Store canned jars without outer rings. If a vacuum seal ever fails, the lid pops loose immediately, alerting you before spoilage spreads.

First In, First Out: Label every jar with month and year; keep the oldest harvest rotated forward.

You now hold the core preservation toolkit: Salt osmosis, wild ferments, low heat drying, and anaerobic infusions.
