Class 116: Dutch Oven Radiant Heat & Steam Dynamics. 🍞🔥
A heavy cast iron Dutch oven is essentially a miniature commercial hearth deck inside your home oven. Mastering its physics is the secret to bakery grade sourdough blisters and towering oven spring.
Cast iron radiates heat evenly from 360 degrees, while a tightly fitted lid traps the natural evaporating moisture of the dough. This trapped steam keeps the outer starches gelatinized and flexible during the first 20 minutes of baking, allowing maximum expansion before the crust hardens into a deeply caramelized blister.
Baking with Cast Steam Traps:
• Thermal Saturation: Preheat both the base and lid at 475°F for at least 45 minutes to ensure deep, stored radiant energy.
• The Steam Stage: Keep the lid sealed tight for the initial phase to let internal loaf moisture saturate the chamber.
• The Venting Stage: Vent steam and remove the lid for the final 15 to 20 minutes to direct raw dry radiant heat against the loaf, caramelizing the sugars.
