Week 2 Masterclass drops this Wednesday:
The Lost Art of Food Preservation. 🧺🧂
Before industrial refrigeration and artificial stabilizers, every household pantry relied on simple biological chemistry to turn an autumn harvest into winter sustenance.
This week (Wed–Sat), we are pulling back the curtain on traditional pantry preservation:
Wednesday: Salt Curing & Osmosis (The cellular science of moisture extraction).
Thursday: Lacto-Fermentation vs. Vinegar Pickling (Live probiotic cultures vs. shelf-stable acids).
Friday: Sun & Air Dehydration (Concentrating nutrients and flavor without grid power).
Saturday: Building the Winter Larder (Preventing mold, pests, and moisture in long-term storage).

Tell us in the comments: What is your favorite harvest staple to put up for winter crocks of pickles, dried herbs, or cured provisions?
