Finding a rusted, crusty cast iron skillet at a yard sale or barn doesn’t mean it belongs in the scrap pile. Unless the metal has cracked or warped along the base, century-old iron can almost always be restored to heirloom perfection.

The Restoration Process:

● Dissolve Oxidation Safely: A 50/50 bath of white vinegar and cold water dissolves surface rust in 30-minute intervals. Rinse immediately to prevent the acid from pitting bare iron.

● Guard Against Flash Rust: Raw iron rusts within seconds when exposed to room air. Dry the pan immediately with clean towels and wash over direct stovetop heat.

● Reset the Foundation: Wipe the warm, stripped iron completely with high-smoke-point oil and start your base seasoning layer immediately at 450°F.

  1. When applying that base oil layer, wipe it down until the skillet looks completely dry, as if you made a mistake putting oil on it at all. Excess surface oil is what causes sticky spots and flaking instead of a smooth, glass-like polymerization.
